Sautéed Vegetables
This dish is a vibrant collection of vegetables cooked in rich olive oil to achieve a nutritious, satisfying, healthy meal.


Ingredients:
Onions / garlic
Olive oil
Vegetables: As many as you like!
Spices: salt, sweet paprika (optional: cumin, turmeric, coriander seeds)


Instructions:
Use a wok. If you don't have one, a large cooking pot works.
Peel and chop the vegetables into bite-sized pieces.
Place the diced vegetables in a deep bowl and mix well with olive oil.
Add in the salt and spices to the mix.
Turn on the stove on high heat.
Once the wok is hot, turn down the heat to medium high and generously grease the wok with olive oil.
Add in onions and stir until caramelized or adjust to your preferences.








Add in the vegetables, mix and stir well for around a minute. Make sure the bottom doesn't burn.
Lower the heat to medium low, and let to cook for approximately 20 minutes.
Don't leave the kitchen! Keep checking and stirring every 5 minutes or so.
Dish should be done once everything is golden and the bottom of the wok is crispy.
