Sautéed Vegetables

This dish is a vibrant collection of vegetables cooked in rich olive oil to achieve a nutritious, satisfying, healthy meal.

Ingredients:

  • Onions / garlic

  • Olive oil

  • Vegetables: As many as you like!

  • Spices: salt, sweet paprika (optional: cumin, turmeric, coriander seeds)

Instructions:

  • Use a wok. If you don't have one, a large cooking pot works.

  • Peel and chop the vegetables into bite-sized pieces.

  • Place the diced vegetables in a deep bowl and mix well with olive oil.

  • Add in the salt and spices to the mix.

  • Turn on the stove on high heat.

  • Once the wok is hot, turn down the heat to medium high and generously grease the wok with olive oil.

  • Add in onions and stir until caramelized or adjust to your preferences.

  • Add in the vegetables, mix and stir well for around a minute. Make sure the bottom doesn't burn.

  • Lower the heat to medium low, and let to cook for approximately 20 minutes.

  • Don't leave the kitchen! Keep checking and stirring every 5 minutes or so.

Dish should be done once everything is golden and the bottom of the wok is crispy.
